100 Year-Old Soup!!!!

The Soup’s On event is coming up tomorrow night. This week we’ve been asking 1075 Beach Radio Texters/On-liners what their favourite soup is. Marilyn Todosychuk shared “Anything homemade. I can’t decided maybe minestrone or cheddar corn chowder.”

Beach Radio Texter Shawndra Meise said, “Home made chicken rice soup made by my mom is my fave” and Beach Radio Texter Susan Steele said “beef barley.”

As well, Beach Radio texter Wendy Chambers wrote “My fav is the Borscht that I make using a 100 year old recipe from a grandmother-in-law who fled Russia during the 1917 revolution. I took a picture of the recipe card my mother wrote out for me 30+years ago. The original recipe was shared by Tilly, who was only 5 or 6 years old when her family fled Russia during the 1917 revolution. It’s a simple recipe probably handed down forever in Tilly’s family…she was the closest person I had as a grandmother when I was 12.. She had this wonderful lined & wrinkled face which I have always wanted to paint or sketch! She always wore these huge diamond drop earrings no matter.. She told me stories and the one that always stuck with me was how she watched her father bury jewelry, gold etc under a tree before they fled Russia.”

It’s a basic Borscht recipe and the recipe card reads:
Soup
Cabbage 1 head                             Bay leaf
Potatoes, grated 2                         Pepper
Wine Sauerkraut (Jar)                  Salt
Fry 2 onions and beets                Dill
Peel and grate 2 medium size?. Add to soup.
Add tomatoes                              Serve with sour cream
